When it comes to celebrate Mexican Independence Day, pozole is the most popular dish on every table!
Its name, of Nahuatl origin, means 'foam', because it is prepared with grains of a special corn called cacahuazintle, which is previously cooked for two hours in a solution of water with calcium oxide to make the corn grains lose the fibrous shell that covers them and when they boil they open like a flower, which gives them a foamy appearance. Once ready, the corn is added to a broth with shredded chicken or pork and final garnishes.
